Grilled sea bass recipe

A light and delicious dinner option, sea bass is also rich in both iron and calcium. A healthy, balanced diet should include 2 portions of fish a week, so here's our simple recipe for grilled sea bass to help you get one of them in your diet quickly and easily.

Ingredients

  • 2 seabass fillets
  • 50g green beans, blanched
  • 100g new potatoes, sliced
  • 4 cherry tomatoes, cut in half
  • 1 tbsp olives, cut lengthways
  • Salt
  • Pepper

Dressing

  • 6 tomatoes
  • ½ bunch chives
  • 1 lemon
  • 200ml olive oil

Method

Trim the fat and clean the seabass fillets. Then season and grill with the skin on first for 2 minutes, then turn and cook for a further 2 minutes.

Sauté the new potatoes in butter until golden in colour, then add the olives, beans and cherry tomatoes and cook for 2 minutes.

To make the dressing, deseed and chop the tomatoes, add the lemon juice, finely chopped chives and the olive oil, then season.

Place the potato mix on the plate first, top with the seabass fillet and then serve with the tomato dressing and lemon wedge.
