Ingredients

  • 45g whole rolled oats
  • 30g whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 60g melted butter
  • 50g light brown sugar
  • ½ teaspoon vanilla
  • 2 medium eggs
  • 50g dark chocolate, chopped
  • 50g dried black berries
  • 50g chopped walnuts
  • 50g sliced almonds
  • 20g milled flax seed
  • 1 tablespoons chia seeds

Method

1. Preheat oven to 180 degrees Celsius.
2. Coat half sheet pan with cooking spray and set aside.
3. In a large mixing bowl, combine apple sauce, melted butter, sugar, vanilla, then mix to combine.
4. Add flour, baking soda, and sea salt; mix until 80% incorporated.
5. Add oats in three small batches, mixing between batches.
6. Do not over mix.
7. Add chocolate, berries, and nuts; stir to incorporate.
8. Drop cookies onto prepared pan by the tablespoon or use a large cookie scoop.
9. Bake at 180 for 12-15 min or until edges are crispy and lightly browned.
10. Store in an airtight container.
11. Dough can be frozen for two months or it will last one week in the fridge.
12. Baked cookies freeze well for up to 2 months.
